山药情

<p class="ql-block"><span style="font-size: 18px;">作者,曹友&nbsp; 张家口赤城县马营人</span></p><p class="ql-block"><br></p><p class="ql-block"><br></p><p class="ql-block"> 山药爱我我爱它,</p><p class="ql-block"> 根扎大地百姓家。</p><p class="ql-block"> 搭配菜食餐桌味,</p><p class="ql-block"> 滋养全民大中华。</p><p class="ql-block">&nbsp; </p><p class="ql-block"> </p><p class="ql-block">&nbsp; &nbsp; &nbsp;  秋天买的山药吃完了,今天又去市场买回二十斤。二块钱一斤,老伴说,这么贵你买了这么多。我说这几天因为疫情各种菜都涨价了,我爱吃山药饭和山药做的菜,就多买点。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; 随手放下买回的山药,我坐在一旁休息抽烟。忽地想起小时候老家的山药来,那么地多,那么地纯天然,那么地随便吃。而且捡好的吃,吃完了,就从窖里取一筐。</p><p class="ql-block"> 想吃山药鱼山药傀儡就闷一锅山药,半小时以后揭锅全是开了花的山药,像花朵一般,喜出望外的对着人笑,笑的那么开心,那么灿烂。我总是捡笑的最甜的拿出来,抱在手里和它亲热一番,左看右看真是不忍心吃掉它。母亲说,快吃了吧,凉了就不好吃了。这才就着咸菜条,三口两口吞咽下去,吃到嘴里是那么的香甜可口,咽到肚里又是那么的热乎温暖,这或许是那个饥荒年代的原因吧,让我一直深爱着山药。今天为山药作首诗吧:</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 《山药》</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 春植四月沃土潜,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 秋天八月回家园。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 蒸熟脱衣鲜嫩肉,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 人人看见都眼馋。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 户户百姓餐桌菜,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 顿顿碗中味道鲜。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 任凭炸煮蒸烧炒,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 营养丰富美誉传。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; 因为我爱吃山药和山药饭,从小是吃山药长大的,所以越发的让我想起了老家的山药,记得小时候生产队种好多山药,好像是比别的作物产量高,到了秋天起山药季节男人用铁铲剜,女人们在地上捡,会计算帐队长把关,每家每户分一窖山药,能吃到第二年春天,每天吃饭几乎离不开山药,所以山药深深的刻印在我的脑海里。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 我是50年代出生的,到六十年代正是贫困的年代,条件有限,到了冬天家家除了有个热乎炕,还有一个用坭捏的土火盆取暖,孩子们饿了就用火盆烧山药,土火盆烧山药最好吃,糊香糊香的,皮脆里沙,袅袅的冒着热气,香的垂涎欲滴,有时候炒莜麦烧的火多,也拿上山药放灶火里烧山药,火多烧山药时间短熟的快,又香又管饱。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 后来改革开放土地分到个人手里也是用好地种山药,每年家家户户储存一窖山药,以备冬天吃,从小就是吃山药长大的。讲一个小故事,年轻时和我弟弟往北京贩猪,因为单位结不了帐,留我在店里住一个月等着要钱,店里不管饭,想吃什么自己做,大部分都下饭馆,我就爱吃山药豆腐自菜熬大烩菜吃馒头,去市场买上回店自己做,天天如此,店老板就给我起了个山药脑袋,见面就喊山药脑袋,当然是开玩笑的。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 现在老了,还是离不了山药,每年秋天从市场里买两袋子,留着冬天当菜吃,或者吃山药饭。因为山药在平时的菜肴当中能和许多菜搭配着炒,煮,熬,夏天凉伴山药丝就饭。炖红烧肉和鸡腿儿时加上山药块,炖出来比肉好吃。山药炖牛肉,山药炖排骨更是无比好吃,山药炖豆腐大烩菜,等等多种多样。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 老人们常说的一句话:山药熬茄子,香死老爷子,山药熬白菜,香死老太太。可见,山药是我们老百姓餐桌上深受喜爱的食物之一。尤其,山药的营养价值还很丰富,含有多种人体所需的维生素和微量元素,让我们张家口地区坝上坝下的人一见山药莜面饭,便喜出望外,垂涎欲滴!</p><p class="ql-block">我用几段诗形容山药的菜肴和山药饭:</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 一&nbsp; 《山药丝》</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 千刀精艺切细丝,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 配绊辣椒展玉姿。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 热炒凉伴君满意,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 佳肴佐酒赋新诗。</p><p class="ql-block"><br></p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 二&nbsp; 《山药粉》</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 土豆细磨琼浆流,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 条条似龙精轫柔。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 粗细宽园有亮度,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 口中滑润味香悠。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 三&nbsp; 《山药鱼》</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 山药脱衣任人搓,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 伴面揉和随便做。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 入碗调汤蘑菇肉,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 佳味喷香沒的说。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 四&nbsp; 《山药饼子》</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 山药焖熟剥去衣,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 用手锅中搓面泥。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 葱花油盐调美味,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; 烙成饼饼垂涎滴。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 五&nbsp; 《山药大烩菜》</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 山药白菜豆腐鲜,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 满锅烩菜惹人馋。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 熬时煎炒五花肉,</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 香味遍飘传人间。</p><p class="ql-block"> 六 《山药磨晶晶》</p><p class="ql-block"> 山药去皮体肤光,</p><p class="ql-block"> 粉身碎骨磨体伤。</p><p class="ql-block"> 掺和莜面轻搅拌,</p><p class="ql-block"> 出锅蘸汤精又香。</p><p class="ql-block"> 七 《山药粥》</p><p class="ql-block"> 山药跳江大米跟,</p><p class="ql-block"> 高压锅中友情深。</p><p class="ql-block"> 时间不大沾一起,</p><p class="ql-block"> 满碗氤氲香嘭嘭。</p><p class="ql-block">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 家乡的山药,家乡的莜面,不管你走多远,身在何方,家乡的味道一直魂牵梦绕在你的心中,不但有亲情的味道,还有浓浓的诗意和芳香,在远方的游子谁不思念家乡的味道,谁又不去思念家乡的亲情。现在山药遍布全国各地,都品味到山药的益处。</p><p class="ql-block"> </p><p class="ql-block"> 我对山药说了这么多,但还有沒说到的很多,在过去贫困的日子离不开山药度命,现在生活提高了,山药仍然是人们生活中不可缺少的菜食之一。</p><p class="ql-block"> </p><p class="ql-block"> 祝各位关注朋友,家庭幸福!</p><p class="ql-block">身体健康!!</p><p class="ql-block"><br></p>
